image(4) So when I started feeding Little K around 6 months old, I was very strategic about the foods that I gave her.  I wanted to set a good foundation for her.  She loved all things green!!  She ate so clean, and then she turned 2!!!!  Eating these days seem to have taken on a whole new meaning. She doesn't eat all that bad now, but she seems to be getting pickier about what she eats.  I definitely don't force anything on her and she has her fair share of treats, but I really try to get a couple servings of veggies and fruit everyday.  Breakfast seems to be our toughest meal of the day.  She doesn't seem to like many breakfast foods. These pancakes are cooked at least 4 times a week and devours them.  I top it with Earth Balance Butter (if you haven't tried this yet, you are really missing out!!  We all love it in this household!), and maple syrup.

Toddler Pancake

Put one whole egg, 1/8 cup of oats, a couple leaves of spinach, a handful of frozen blueberries, and a dash of cinnamon in a magic bullet, or ninja.  Mix in the bullet.  Heat a skillet that is covered in cooking spray.  This recipe makes one, so you can pour the whole thing on the skillet.  Cook until browned on each side.
