Thai Lettuce Wraps
This recipe has been in our household for a while, and over the years I've tweaked and perfected it so it is just to our taste. I have brought this to many parties as an appetizer, and I have cooked it for dinner. It's gluten free and dairy free and you can definitely switch out the peanuts for almonds and the peanut butter for almond butter. This is definitely one of our go to's for easy dinner recipes!! Chicken Thai Lettuce Wraps
Directions:
In a skillet, cook the ground turkey over medium-high heat, stir frequently and drain when it is thoroughly cooked. Return back to skillet. Add green onions, lime juice, peanut butter, sweet and sour sauce, sugar, and red pepper flakes. Cook 3-5 minutes longer.
To serve, spoon 2 heaping TB of turkey mixture, 1 TB of carrots, and 1 tsp of peanuts on each lettuce wrap. Serve warm.
Ingredients:
1 pound ground turkey or ground chicken
1/4 cup chopped green onions
2 TB lime juice
2 TB sweet and sour sauce
3 TB creamy peanut butter or almond butter
2 tsp red chile paste
1 tsp raw sugar
1/2 tsp crushed red pepper
1 cup shredded carrots
1/3 cup salted peanuts or almonds
medium bib lettuce leaves
