Broccoli and Cauliflower Salad Side Dish
My mother has been making my Grandmother Susan's recipe for as long as I can remember. I was determined this year to make this same recipe but as organic as possible, and as healthy as possible. Let me tell you, I was so pleased with how this came out. I was definitely nervous because the recipe called for mayonnaise and ranch dressing. I tried the avocado mayonnaise, and while I really liked how it tasted right away, I was nervous that it would turn the salad brown overnight, but it didn't!! And it was SO delicious!! Here is the recipe. Please leave me a comment if you try this recipe! I would love to hear your thoughts! I brought this to Thanksgiving as a side, but it would really work all year around as a side.
Broccoli and Cauliflower Salad Side Dish
Ingredients
1 head Broccoli
1 head cauliflower
1 small onion finely chopped
6 slices bacon-I used Applegate's Turkey bacon
2 avocados
1/4 cup of lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon sea salt
3 TB of EVOO
Directions
Combine the chopped broccoli, chopped cauliflower, small onion, and cooked/crumbled bacon in a bowl. Mix together. I used a Ninja for the avocado mayonnaise. I placed all of the items in there and blended it until it looked creamy. Mixed it with the rest of the ingredients and refrigerate over night or for at least 4 hours.
